Ingredients: 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces 6 cups chicken broth 1 tablespoon fresh ginger, peeled and grate 2 cloves garlic, minced 1 cup celery, sliced 1 cup mushrooms, sliced Fresh cilantro or parsley for garnish

Heat some oil in a large pot over medium heat, Add chopped onions, garlic, and grated ginger.

Cook the mixture for 2 to 3 minutes until it becomes aromatic.

Add the chicken to the pot and cook until it's no longer pink.

Pour the broth into the pot and boil. Then, simmer for 15 minutes.

Add carrots, celery, and mushrooms. Simmer for 10-15 minutes until vegetables are tender.
