Ingredients: 2 cups all-purpose flour 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1 teaspoon ground cinnamon 1/2 teaspoon ground nutmeg 1/4 teaspoon ground cloves 1 cup pumpkin puree 1/2 cup brown sugar 1/2 cup granulated sugar 1/2 cup vegetable oil 2 large eggs 1 teaspoon vanilla extract 1 cup shredded cheddar cheese

Preheat the oven to 350°F (175°C) and grease a 9x5-inch loaf pan with flour.

In a bowl, mix flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.

In another big bowl, blend pumpkin puree, brown sugar, granulated sugar, vegetable oil, eggs, and vanilla extract until smooth.

Add dry ingredients to wet, mix until just combined. Avoid overmixing. Gently fold in half of the cheddar cheese.

Pour half the batter in the pan. Sprinkle cheddar. Add the rest of the batter.

Bake for 50-60 minutes or until a toothpick comes out clean when inserted.

Cool in pan for 10 mins, then transfer to rack. Slice and enjoy the tasty pumpkin bread.
