Ingredients:  1 whole chicken (about 3-4 pounds), cut into parts  1 onion, chopped 3 carrots, peeled and chopped 3 celery stalks, chopped 2 cloves of garlic, minced 8 cups of chicken broth

Place the chicken parts in a large pot and cover with the chicken broth. Bring to a boil.

Remove foam, reduce heat, and simmer for 30 minutes.

Remove chicken, let cool, then shred into small pieces.

While waiting, filter the broth to eliminate any particles and pour it back into the pot.

Add onion, carrots, celery, and garlic. Cook for 15-20 minutes until tender.

Put the chopped chicken back in. Season with thyme, salt, and pepper.

If using egg noodles, put them in and cook as directed.

Taste and add more seasoning if required.

Add fresh parsley before serving for more freshness and flavor.

Serve hot and enjoy your homemade chicken soup!
