Ingrediant: Pumpkin Ginger Cupcakes

  • Two cups of flour (all purpose)
  • One package (3.4 ounces) of quick butterscotch pudding mix
  • One-third cup of finely chopped ginger
  • One tablespoon of cinnamon powder
  • Two tsp baking soda
  • half teaspoon of ginger powder,
  • ½ teaspoon of allspice powder
  • 1/4 tsp ground cloves
  • Salt, ¼ teaspoon
  • One cup of room-temperature butter
  •  one cup white sugar,
  • One cup of dense brown sugar
  • Four large, room-temperature eggs
  • One (fifteen-oz) can of pumpkin puree
  • One tsp vanilla essence

Recipe: Pumpkin Ginger Cupcakes

Step1. Turn the oven on to 350 degrees Fahrenheit (175 degrees Celsius). 24 muffin cups can be lined up with paper liners. don’t forget to grease them.

Step2. In a dish, mix together flour, pudding mix, crushed ginger, allspice, cloves, cinnamon, baking soda, and chopped ginger; put aside.

Step3. In a big bowl, use an electric mixer to beat butter, white sugar, and brown sugar until frothy and light. One egg at a time, beating thoroughly after each addition; beat in vanilla and pumpkin purée with remaining egg. Add flour mixture and stir until just mixed. Evenly distribute the batter among the muffin tins.

Step4. Bake for about 20 minutes in a preheated oven, or until brown and the tops bounce back when pressed lightly. Muffins should cool in the pans for ten minutes before being taken out and allowed to cool fully on a wire rack.
